Yes, you read that right. Who would have thought that St. Peter’s fish (otherwise known as tilapia) could be made into a dessert… a dessert that is so unique to the palate…

The Daerrys Tilapia Ice Cream is the brainchild of Central Luzon State University professors—Dr. Teresso A. Abella, who dreamt up the project, and Dr. Dana G. Vera Cruz, who developed the recipe for the product. 

As Dr. Vera Cruz says, “ I like to make ice cream cake at home so I used my own concoction to make the tilapia ice cream and I just incorporated the steamed tilapia fillet”.

Because of that creamy and unique ice cream concoction, tilapia ice cream debuted and won the Innovation Gold Award at the Salon International de L’Agroalimentaire (SIAL) ASEAN Manila in August 2016.

SIAL Innovation offers an exceptional showcase of global trends and innovation in the food and beverage industry. It’s impressive, isn’t it? Tilapia ice cream has made big waves not only nationally but also internationally.

Though it’s locally produced as a specialty product, rich and creamy Daerrys Tilapia Ice Cream has gone on tour throughout the world. “Many people are asking for it, they want a taste of it.”, Dr. Vera Cruz said.

What a sweet problem indeed for Dr. Vera Cruz’s team. Truly tilapia ice cream has reached different parts of the world and the group continues to innovate and invent different recipes to further strengthen the tilapia industry.

The team aims to improve nutrition while eating ice cream and dessert with the solution of turning protein through Daerrys Tilapia Ice Cream and Tilapia Cookies. Daerrys products contain approximately 13 percent to 46 percent of the Daily Recommended Energy And Nutrient Intake (or RENI) for protein, which is higher than other commercial brands.
